This Indian dish is rich in spices of India. You will never see a menu without Kadai Panner mentioned into it any India Restaurant. If you are an Indian, You will probably see everyone ordering this dish in a restaurant.

You must be wondering about why this name “Kadai Paneer” Let me get out of the mess, In India, Wok is known as “Kadai” which is commonly used by Indians as a cooking essential utensil, in which they can prepare to stir fry, deep fry of snacks and all frying related stuff and “Paneer” is basically Indian cottage cheese.

This dish is commonly made in Kadai and if you don’t have the same you can use a wok or frying pan as a substitute of Kadai.

So Let’s Get Started with the Recipe!

You need to prepare this dish in two segments First you need to get “Kadai Gravy “ prepared and after that, you can complete this dish as “Kadai Paneer”

1) Kadai Gravy

Let me mention the Ingredients for this Delicious Dish first, you need-

  • Ghee                                     -750 gms
  • Garlic Paste                         – 30 gms
  • Coriander Seeds                 -15 gms
  • Whole Red Chilies              -10 Nos
  • Green Chilies                       -4 Nos
  • Ginger                                   -45 gms
  • Tomatoes                             -675gms
  • Salt                                         -To taste
  • Kasuri Methi                        -5gms
  • Garam Masala Powder      -5gms

PREPARATION

Spices:
Pound the coriander seeds and whole red chilies with a paste.
Vegetables: Remove stems, wash, slit, and de-slit and chopped green chilies. Scrap, wash and chop the ginger. Wash and chop tomatoes.

COOKING

Let us start with heating ghee in a Kadai. Add garlic and sauté over medium heat until light brown. Add the pounded spices for 30 seconds. After that add green chilies and ginger and sauté for 30 seconds. Then add tomatoes and bhuno until the fats come to the surface. Now add Fenugreek and salt, Stir it well and sprinkle garam masala over it and stir.

2)Kadai Panner

INGREDIENTS

  • Ghee                                     -40 gms
  • Paneer                                 – 600 gms
  • Coriander                             -50 gms
  • Whole Red Chilies              -5 Nos
  • Coriander Seeds                 -4 Nos
  • Ginger                                   -15 gms
  • Tomatoes                             -675gms
  • Kadai Gravy                          -550 gms
  • Kasuri Methi                        -A Pinch
  • Garam Masala Powder      -5gms
  • Capsicum                               -25gms

PREPERATION

Paneer:
Cut Paneer into fingers.

Vegetable: Remove Stems and Cut capsicum into half. De-seeds it and make julienne of it. Wash and chop 2/3 of ginger and cut the rest into julienne for garnishing. Clean, Wash, and Chop Coriander.

COOKING
Heat some amount of ghee in a Kadai. Add capsicum and sauté over medium heat for 30 seconds.  Add the pounded spices and chopped ginger, Stir it for 30 seconds. Then add Kadai gravy, bring to a boil, and bhuno until the fat leaves the masala. Now add paneer to it and stir gently for 2-3 minutes. Sprinkles Kasuri methi and garam Masala. Stir and adjust the seasoning.

TO SERVE

Delicious “Kadai Paneer” is now ready to be served, Remove this to a dish garnish it with ginger julienne and coriander and serve this with Naan, Fulka or Parantha.

NOTE
For Vegan lovers; replace the paneer with tofu and ghee and oil with soya cream.
